If I could send my kids home with paints to have some at home fun I would. But unfortunately I just mention color theory ALMOST every day in my classroom. I used foam board and paint. To ensure durability I laminated everything. All that you see is attached to foam board by velcro and can be moved or taken of depending upon the discussion in class.
